Slow Cooker Chicken

This has been a staple "recipe" for years.  And it's the easiest ever.  Ready? 

Take a whole chicken.  
Put it in your slow cooker on low for 5-6 hours.  
Voila!

Wasn't that easy?  You can use the chicken for whatever recipes you want. 

And you can toss the bones back in your slow-cooker to make the Easiest Chicken Stock or this Nourishing Traditions Chicken Stock.

Easiest Chicken Stock

I like to make a whole chicken in my slow-cooker, remove the meat, then throw the carcass back in overnight to make stock.

Ingredients:

chicken carcass, free-range
4 quarts filtered water
2 T. apple cider vinegar, unpasteurized and unfiltered - like Bragg's brand
garlic, optional
juice of 1/2 lemon, optional
flat leaf parsley, optional

Instructions:

Place ingredients on LOW for 12+ hours.  Let cool.  Refrigerate.  When fat solidifies at the top, skim it off.  Divide broth into containers and refrigerate or freeze for later use. 

Ice cube trays are hand for freezing small amounts of broth for cooking.  They're especially great for adding broth to things like sauces.  Once the broth freezes in the tray, I like to put the cubes in a freezer bag. 

Chicken Bone Broth

Recipe:
Free-range chicken carcass
about 4 quarts filtered water
1/2 c. apple cider vinegar, unfiltered and unpasteurized - like Bragg's brand
salt
garlic, optional
juice of 1/2 lemon, optional
flat leaf parsley, optional

Instructions:
Place ingredients in slow-cooker on LOW for 12+ hours.  Let broth cool, then refrigerate.  Once the fat solidifies, you can skim it from the top.

Russian Cutlets (Котлеты) by The Domestic Man

for the cutlets -
2 lbs ground beef
1/2 med onion, blended
3 cloves garlic, blended
1/2 tsp each salt, white pepper, ground mustard
1 egg yolk
1 tbsp butter or ghee
for the sauce -
1/4 cup chicken stock
1 8oz can of tomato sauce or tomato purée
1/2 tsp black pepper
1 tbsp chopped fresh parsley
1 heaping tbsp sour cream

Ingredients
4 tablespoons unsalted butter (plus more for greasing)
5 ounces dark chocolate, chopped - try this kind for dairy, nut and soy free OR make your own
2 eggs + 2 egg yolks
1/4 cup granulated sugar - I'm sure you could substitute honey, maple syrup, coconut palm sugar, Xytlitol or granulated maple sugar in place of the granulated sugar. 
1/2 teaspoon pure vanilla extract
3 tablespoons high-quality all-purpose gluten-free flour (any of these blends will do) - I'm betting you could easily use coconut flour
1/8 teaspoon xanthan gum (omit if your blend already contains it)
1 tablespoon (5 g) unsweetened Dutch-processed cocoa powder
1/8 teaspoon kosher salt
Confectioners’ sugar, for dusting (optional) - I believe you can use honey, maple syrup, coconut palm sugar, Xytlitol or granulated maple sugar in place to make powdered sugar with a blender or food-processor.

This is just how we used to make our raw milk yogurt.  Now that we're next to nothing on our dairy intake, I'm going to try this.  I just need to find some non-BPA/non-Guar Gum coconut milk.
