Homemade Coffee Creamer
You could easily use coconut milk to make dairy free.

Coconut Flour Blueberry Pancakes
These pancakes are so fluffy!
Ingredients
4 eggs from pastured chickens, beaten
3/4 c. coconut milk or almond milk
1/4 c. coconut oil, melted - plus more for oiling pan
1 Tbs. raw honey, softened OR 1/2 c. Xylitol or unrefined cane sugar
1 tsp. vanilla
1/4 tsp. cinnamon
1 small lemon, juice and zest
1/8 tsp. unrefined sea salt
1/2 c. coconut flour
1/4 c. potato starch
1/4 c. white rice flour
OR in lieu of potato starch and white rice flour, use 1/2 c. almond meal
1 Tbsp. baking powder, aluminum-free
1/2 c. blueberries, or to your taste
Instructions
Blend beaten eggs, milk, oil and honey. Add dry ingredients.
Heat skillet (I used my cast iron) and melt a little coconut oil to grease the pan. Pour half-dollar sized pancakes into pan and top with blueberries. Flip when they start to bubble. Cook until golden.
These freeze really well!

Best Chicken Gravy Ever
Ingredients
Drippings and vegetables (onions, carrots, celery, turnips, parsnips - whatever you fancy) from an Oven Roasted Chicken
1/2 c. white wine
Instructions
Take the juices and vegetables from your oven roasted chicken and place in a pan on the stove. Add butter or ghee and wine. Bring to a boil. Using an emulsion blender or regular blender, puree vegetables with sauce.

Oven Roasted Chicken
Oven Roasted Chicken with Gravy
Ingredients
2 onions, quartered4 carrots, peeled and roughly chopped
3 sticks celery
1 whole chicken, free-range or organic, if possible
1/4 c. melted butter or ghee
1 tsp. thyme or several sprigs fresh
1 tsp. salt
4 cloves garlic, pressed
4 c. chicken stock
1/2 c. dry white wine
Instructions
Rinse and pat chicken dry.Blend thyme and salt together.
Place the onions in the bottom of the roasting pan.
Coat chicken with half of the butter or ghee, then sprinkle with half thyme/salt mixture and garlic, and place in the roasting pan, over the onions. Arrange the carrots and celery around the chicken.
Bake at 350 for 1 hour. Remove the chicken from the oven, then flip the chicken. Coat it with the remaining butter or ghee, sprinkle with remaining thyme/salt mixture and garlic. Return to oven for another hour or until juices run clear.
Cut chicken into pieces. Place the chicken in the oven to keep warm while you're making the gravy.
Instructions for Gravy
Pour the wine into the bottom of the roasting pan and scrape up the brown bits. Pour the liquid and vegetables into a saucepan (or, if you're using a flame-proof roasting dish, you can use that) and bring to a boil. Using an emulsion blender or pouring into a regular blender, puree the vegetables in the liquid.Serve hot over chicken pieces.

Jamaican Patties (Ground Beef Curry Pasties)
These pasties are fantastic! Keeping the dough together to make the pasties was a bit tricky, but making them in two pieces on top of my Silpat (instead of the parchment), filling one side with meat, laying the other half on top, them crimping the edges of the two pieces together did the trick.
Next time, I'll chill the dough in the freezer beforehand, too. I think that will make it even easier!
They baked up beautifully, held up nicely while eating, and the leftover were to die for!

Soaked Gluten-Free Naan Bread

- 1 cup warm water
- 2 Tbs lemon juice
- 1 cup buckwheat flour
- 1 cup rice flour
- ½ cup potato starch
- ½ cup tapioca starch
- 1 tsp guar or xanthan gum
- 1 tsp rapadura, optional (helps with browning)
- 1 tsp salt
- 1 tsp baking powder
- Melted coconut oil or ghee (don’t use butter as it will burn)
