Gogi Trail Mix Bar (copycat Lara bar)

Gogi trail mix includes raw walnuts, cashews, and pepitas (pumpkin seeds), as well as dried cranberries and Gogi, a super-food with numerous health benefits.  These bars are made with Gogi trail mix and are a great source of protein, fat, and healthy carbs.   





Ingredients
1 1/4 c. Gogi Trail Mix, roughly chopped
1 c. dried coconut flake, roughly chopped
1/3 c. raw honey
1/4 c. coconut flour
Pinch gray sea salt
2 tablespoons nut butter or sunflower seed butter
2 tablespoons coconut oil, melted

Instructions
  1. Blend the honey, coconut flake, coconut flour, sea salt, nut butter or sunflower seed butter, and coconut oil.  
  2. Fold in the trail mix and coconut flake until evenly coated with the honey mixture.
  3. Line a 9x9 pan with parchment paper and grease with coconut oil. 
  4. Spread the mixture evenly. 
  5. Refrigerate until solid, then cut into bars.
  6. Store in the refrigerator.

Strawberry Freezer Jam (Sweetened with White Grape Juice)


Ingredients:
16 c. already-hulled and mashed strawberries*
3 c. white grape juice
4 1/2 T. low-sugar pectin
(optional: 3 c. raw honey)

Supplies:
25 - 8 oz jelly jars with lids and bands
canning funnel
large stock pot
potato masher
tongs

Instructions:
In a small saucepan, simmer lids in water. 

In a large stockpot, blend mashed strawberries and white grape juice.  Gradually stir in pectin. 

Bring the mixture to a boil that cannot be stirred down. 

Turn heat off.  Ladel the hot mixture into the jelly jars.  Remove the lids from the hot water with tongs and place on top of each jar.  Screw bands finger-tight on jars.  Let cool to room temperature.  Listen for the lids to seal.  Place the jars in the freezer when totally cooled.

* We picked 24 pounds of berries, and froze a one gallon freezer bag full of them.  The rest we used for the jam. 

 





Honey Mustard Chicken with Bacon and Mushrooms

Ingredients
  • 4 chicken breasts, salted and partially pan-cooked in coconut oil or ghee
  • 4-6 slices bacon, cooked until crispy
  • 1 c. sliced mushrooms, sauteed in coconut oil or ghee
      Sauce:
  • 1/3 c. yellow mustard, gluten free
  • 1/3 c. mayo or baconnaise
  • 1/4 c. honey, raw, gently melted

Cooking Directions
  1. Place chicken in dish; layer bacon and mushrooms on top; cover with sauce; bake in glass dish at 350 degrees for 20 minutes or until chicken is cooked through.
