- 2 cups soaked and cooked black beans (or 1 can of no salt added)
- 3 lightly beaten eggs
- 1/3 cup melted coconut oil (or melted butter)
- 1/4 cup cocoa powder
- 1/8 teaspoon unrefined sea salt
- 2 teaspoons vanilla extract
- 1/2 cup raw honey (or other equivalent sweetener)
- 1/2 cup chopped up bittersweet chocolate (sometimes I use this mint chocolate)
- 1/3 cup finely chopped walnuts -optional
1. Preheat oven to 350 degrees F.
2. Melt about 2 tbsp. coconut oil in a 9x9 pan (I put it in the oven while it's preheating).
3. Blend the black beans (I use a hand-held stick blender).
4. Add salt and cocoa powder, and blend.
5. Add beaten eggs, coconut oil, vanilla, and honey, and blend well.
6. Pour batter into greased pan, then gently place the chopped chocolate and nuts strategically in the batter.
7. Bake at 350 degrees F for 30 minutes or until center is set.
